Have you ever heard of a Moroccan Carrot and Chickpea Salad? Because now you’ve seen one. This dish, served family style, would be perfect for Blue Ivy and her parents to have together. It covers almost every food group: fruits, veggies, greens, lentils. Just try it, you’ll like it.

 

Recipe:

Part I, Dressing –

1/3 cup extra virgin olive oil

2 tablespoons fresh lemon juice

1 tablespoon honey

½ tablespoon honey

½ tablespoon sea salt, plus more to taste

1/8 teaspoon cayenne pepper

 

Whisk olive oil, lemon juice, honey, salt, and cayenne pepper.

 

Part II, Salad –

10 ounces of carrot (sliced on a grater)

2 cups cooked chickpeas

2/3 cup chopped dried plums (dates work too)

1/3 cup fresh chopped mint

½ cup sliced almonds (optional, but they add tons of texture and flavor)

Gently toss everything together and you’re good to go. Serves 6.
