Our dinner entailed a scrumptios seafood dinner that circled the star of the show.

Granny’s Lobster Mac N Cheese

1 pound of elbow macaroni

1 quart of whole milk

1 stick of unsalted butter

1/2 cup of all purpose flour

4 cups of grated Gruyere cheese (12 ounces)

2 cups of grated extra sharp Cheddar cheese (8 ounces)

1/2 teaspoon of ground black pepper 1/2 teaspoon of ground nutmeg

1 1/2 pounds of cooked lobster meat (diced into chunks)

1 1/2 cup of white bread crumbs (remove crust)

Prep time: 30 mins Total time: 1 hour 10 minutes

1. Preheat oven to 375 degrees.

2. In a large pot of boiling water add salt and cook elbow macaroni al dente as directed.

3. Heat the milk in a small saucepan, but don’t allow it to boil. Ina large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring constantly with a whisk. Still whisking, add the hot milk and cook for 1 to 2 minutes until thickened and smooth. Remove from heat and add the Gruyere, Cheddar, 1 tablespoon of salt, pepper, and nutmeg and stir until the cheese melts. Stir in the cooked pasta and lobster. (Reserve a few lobster pieces to decorate dish). Pile the mixture into a greased casserole dish (or separate ramekins).

4. Melt the remaining 2 tablespoons of butter, combine with the bread crumbs and sprinkle on top of dish. Bake for 30 to 35 minutes until the sauce is bubbly and dish begins to brown. Add reserved lobster pieces and enjoy!
