Bey and Jay would probably love this pasta dish. It’s full of amazing flavors and the good stuff like protein, fiber, and the health benefits of garlic and pine nuts.
Recipe:
1 medium butternut squash
1 small sweet onion, peeled & diced
3 cloves garlic
Olive oil
Salt and pepper
½ cup fresh sage leaves
½ cup whole-wheat pasta (look for farfalle & double-check that it’s vegan)
¾ cup pine nuts, toasted
Heat oven to 375 degrees. Cut the butternut squash in half and scoop out the seeds/strings. Flip the squash halves upside down and peel them. Then cut them into small cubes and toss with onion, garlic, a little olive oil, salt, and pepper. Mince about half of the sage leaves and add to the mixture.
Spread on a baking sheet and bake for 40 minutes (or until squash is soft).
Cook pasta. Heat about 2 tablespoons of olive oil in a pan and cook the rest of the sage leaves until they start to shrivel. Take out the sage, then add about half the pasta. Fry it (while stirring) until it starts to get crispy at the edges. Add the pine nuts, cook for another minute.
Finally, mix the pasta with the baked mixture and enjoy.
